Pan Fried Prawns

A lazy weekend - lots to do - multitasking galore!! Picked up some prawns on our weekend supermarket trip. There is someone here who can't resist prawns - my daughter Aditi.

These prawns can be prepared quite easily , especially goes well when you have restless people around you :))

Ingredients:
500 gms Prawns
2 tablespoons red chilly powder
1 teaspoon turmeric
1/4 teaspoon pepper powder
1/4 teaspoon garam masala ( optional)
Salt as appropriate
1 teaspoon lime juice
A few curry leaves
Coconut oil for frying

Step1 : Clean and devein the prawns - wash them well
Step 2: In a bowl - mix the powders, salt & lime juice and marinate the prawns in it for about 15 minutes.
Step 3: Heat a pan ,set the flame at the lowest and add the marinated prawns .

Step 4: Let it simmer while the prawns cook in their own juices. They would all curl up and turn pale.

Step 5: At this stage increase the flame and when the juices are all absorbed - add coconut oil and curry leaves. Toss gently and ensure the oil coats the prawns well.

Step 6: Keep tossing .The prawns would be cooked by now and ensure that they are not over cooked. The powders should coat the prawns along with the oil until the curry leaves turn crisp. Take off the heat and serve hot.
