Prawn Masala

The week begins and all of us get back to maintain the schedules for the week.And I make  Prawns Masala for lunch .......and wow ..........here it is...........

Clean,de-vein & wash the prawns,set aside.Heat oil in a pan and fry sliced onions in it.Add a teaspoon of ginger garlic paste and fry well. Add tomato paste and fry all of these until brown.
Grind together a cup of fresh coconut,turmeric,chilly and coriander powder to a fine paste.Add the paste and fry until deep brown. Add a tablespoon of water to scrape out the masala that is glued to the pan.Add salt and tamarind paste to adjust the flavors. Pour warm water while stirring evenly to make it a thick sauce.
While the sauce boils, lower heat and add the prawns and let it cook.......do not stir. Take off the heat when the prawns are almost done - do not over cook.
Heat coconut oil about a tablespoon,splutter some mustard ,cumin & fenugreek seeds. Add a pinch of asafoetida , whole red chilly and a few curry leaves. Season the curry with this. Garnish with some fried onions, I always have some fried onions  stored in the fridge, its a huge time saver.
